Open-source programming for organizations

Most organizations rely on enterprise-grade software, because of either price or security reasons. Nowadays, there are a lot of different open-source products that can deliver the same results. But how do you incorporate Open Standards into your projects, choose which packages to use, maintain repositories and keep the codebase secure and reliable?
